SWEET BANANA SOUP - Chè Chuối
Serves: 4 Preparetion time: 8 hours for soaking Cooking time: about 45 mins
Ingredients:
8 ripe dwarf bananas
300g (10 oz) cassava
1 cup (250 ml) coconut milk
60g (2 oz) roasted peanuts, crushed
300g (10 oz) sugar
2 teaspoons salt
¼ cup pearl tapioca
Recipe:
1. Peel and soak cassava in salt water for a night. Then, drain well.
2. Cut cassava into large pieces, steam cassava in a steamer for about 20 minutes
3. Peel bananas, remove their strings. Soak in salt water for about 5 minutes. Drain them.
4. Soak pearl tapioca in water for about 20 minutes to expand. Drain it
5. Boil a liter for about. Add bananas and ½ cup of coconut milk. Bring to a boil for about 10 minutes. Add sugar and a little salt. Then, add cassava and cook for another 10 minutes.
6. Add pearl tapioca and continue cooking for about 5 minutes until the pearl tapioca is clear. Add ½ cup of coconut milk. After seasoning again. Bring to a boil and remove from heat immediately.
7. Ladle soup out into a bowl and sprinkle with peanuts.
