CABBAGE ROLL SOUP (Canh bắp cải cuốn thịt)
Serves: 4 Preparation time: 20 mins Cooking time: about 60 mins
Ingredients:
1 liler broth
200g (7 oz) ground pork
3 dried wood ear fungus, soaked in water to soften, diced
6 large cabbage leaves
12 scallions
3 sprigs cilantro
2 teaspoons minced shallots
2 teaspoons stock granules (optional)
½ teaspoon ground pepper
Pinch of salt
Recipe:
1. Mix ground pork with 1 teaspoon of stock granules, minced shallots, fungi and ground pepper
2. Cut off the thick centre stem from each cabbage leaf. Wash well. Dip in hot water to soften and drain well.
3. Place the mixture onto the cabbage leaves. Fold and use scallion (dipped in hot water to soften) to tie securely.
4. Boil the broth, add the cabbage rolls and simmer for about 10 minutes. Season to taste with stock granules and salt
5. Ladle soup out into a large bowl, sprinkle with pepper and garnish with cilantro. Serve hot.
